Indonesian chicken satay

Ingredients

(2 People)

  • Chicken: 4 chicken breasts
  • 20g of satay spice mix
  • Salt
  • Extra virgin olive oil

Dip:

  • 6-8 sprigs of fresh cilantro
  • 1 red chili pepper
  • 1 clove of garlic
  • 3 heaped tablespoons of peanut butter
  • 2 cm of ginger root
  • 3 tablespoons of kecap manis (or soy sauce and a pinch of sugar)
  • 1 teaspoon of brown sugar
  • 1 lemon, a little water (to thin the sauce), a pinch of salt, extra virgin olive oil or sesame oil (optional).
PREPARATION

Step 1

  • Cut the chicken breasts into similar-sized cubes and thread them onto skewers.
  • Once the skewers are threaded, the meat is cut to separate them. To tenderize the meat and make it more even, it is briefly pounded with the blunt side of the knife blade.
  • Once the chicken skewers are prepared, season them with the spices, rub them with a little extra virgin olive oil and put them on the griddle or a wide frying pan to cook them over medium-high heat, depending on how thick the pieces are.
  • Meanwhile, prepare the sauce; it's as simple as putting all the ingredients into the food processor or blender and blending.
  • Place the cilantro leaves, the seeded chili pepper, the garlic (previously peeled and with the germ removed), the peanut cream, the chopped ginger, the kecap manis sauce, the sugar, the grated lemon peel, and the lemon juice.
  • Blend and taste to add water, to obtain the desired texture, and adjust the salt.
  • Serve the freshly made chicken skewers with a small bowl of satay sauce. If desired, drizzle a little oil over the skewers and/or the sauce. Enjoy!
