Samosas

Ingredients

  • 1 1/2 cups flour
  • 2 medium potatoes
  • 1 chopped onion
  • 1 cup peas
  • 1 cup ginger
  • 1 teaspoon of coriander seeds
  • 2 cayenne peppers
  • 1 teaspoon black mustard seeds
  • 1 teaspoon cumin
  • 1 cup lemon juice
  • 1 bunch cilantro leaves
  • 2 tablespoons butter
  • Oil
  • Salt
PREPARATION

Step 1

  • Place the flour in a deep bowl. Make a well in the center and add a pinch of salt, melted butter, and 5 dessert spoons of water. Knead for 10 minutes until you have a smooth, elastic dough. Cover with a damp cloth and set aside in a warm place.

  • Combine the cooked, peeled, and chopped potatoes, cilantro leaves, black mustard seeds, cumin, and lemon juice. Simmer for 5 minutes. Remove from heat and let cool.
  • Divide the dough into walnut-sized balls

 

Step 2

  • Roll out the dough and cut out a square.
  • Put a little filling in the center, wet the edges with a water brush, fold diagonally and join, pressing with your fingers.
  • Fry in very hot oil until golden brown.
  • Drain on absorbent paper and serve.
