Spiced cupcakes

Ingredients
  • 100ml olive oil
  • 200g flour
  • 200g sugar
  • 3 eggs
  • 1 1/2 teaspoons of baking powder
  • 120ml milk
  • 2 teaspoons ground cinnamon
  • A pinch of nutmeg
  • A pinch of ground ginger
  • A pinch of ground cardamom

 

For the frosting:

  • 120g butter
  • 300g icing sugar
  • 120g cream cheese
  • 1 or 2 tsp spice mix
PREPARATION

Step 1

  • Preheat the oven to 180°C.
  • We left the oven like that and started preparing the dough
  • We take the sugar and oil and beat it together, then we add the eggs one by one.
  • Sift the flour with the baking powder and spices and add it to the mixture, then beat the mixture at low speed until incorporated, add the milk and beat again.

 

Step 2

  • After beating the mixture, we prepared a 12-cupcake tray with 12 paper liners and divided the mixture among them, filling them no more than 2/3 full.
  • Bake for 22 minutes or until a toothpick inserted into the center comes out clean.

 

Frosting

  • To prepare the cream, beat the icing sugar with the butter until you have a creamy mixture (about 5 minutes)
  • Add the cream cheese and beat until combined.
