Thai red curry paste

Ingredients
  • 1 tablespoon of coriander seeds
  • 1 teaspoon of cumin
  • 8 black peppercorns
  • 1 tsp salt
  • 12 cayenne peppers
  • 3 lemongrass branches
  • 4 kaffir lime leaves
  • 140g peeled onion
  • 4 peeled garlic cloves
  • 20g of galangal powder
  • 4 sprigs of fresh cilantro
  • 40 gr. oil
  • The skin of half a lime.
PREPARATION

Step 1

  • First, toast the coriander seeds, cumin, and black pepper in a pan.
  • Toast over low heat until they start to release their aroma.
  • Next, add the remaining ingredients and blend with a mixer or crush with a mortar and pestle until you get a smooth paste.
